  No staff will be present [when?], and guests will be asked to use the sunken hearth by themselves. Please bring your own charcoal (oga charcoal, etc.) and food for the sunken hearth.

  Taste the individual ingredients.

  A charcoal fire is rarely used at home.
  Why don't you try using such a charcoal fire in the old private house Marugayatsu? Put your vegetables, meat, and fish over the charcoal, and let it the charcoal burn slowly.
  You will start to smell the delicious aroma of the food. As soon as you feel your chopsticks start to move, as if with a will of their own, you will be overcome by the delicious flavors and simple, deep aroma.
  This is totally different from the usual mackerel! The mushrooms, which I usually leave out, are my favorite ingredient today! Surrounded by wood, the sunken hearth brings out the "true" flavor of the ingredients.
